RUBEN PORTO
Founder / Chief Ice Cream Maker / Chief Cleaner
A quick something about me: I graduated from Aberystwyth University in 2007 with a degree in law and started law school in 2008. After my first week of law school, I realised that a career in law just wasn’t for me and hastily dropped out. Since then, I’ve been extremely fortunate to have taught English in Cameroon, Japan, South Korea, Spain, Portugal, and Kuwait.
I started researching and blogging (www.icecreamscience.com) about the science behind ice cream production in 2011 and sold my first scoop of ice cream at a pop up event at Oxford Brookes University.
I found a (tiny) commercial kitchen space in the heart of Manchester in 2017 and started making ice cream full-time to serve up at weddings, corporate events, private events, and food markets in and around Manchester. I occasionally venture into the deep wilderness of London.
GREAT TASTE AWARDS 2018
In September 2018, I won the GOLDEN FORK from the north of England award at the Great Taste Awards 2018. My Sicilian Bronte Pistachio Ice Cream was judged to be a top 18 product out of 12,634 products entered. I’ve won a total of 8 GOLD STARS from the Great Taste Awards, including the highest award, 3 GOLD STARS, for my Sicilian Bronte Pistachio Ice Cream, and for my Single-Origin Sumatran Coffee Ice Cream. Not bad for a self-taught ice cream producer!
